Back at it with the last of the damsons…
Damson Compote (900 g batch)
• 900 g damsons
• 100 g caster sugar
• 1 vanilla pod (split, seeds scraped, pod added too)
• 3 cinnamon sticks
• 260 ml fortified wine (I used 130 ml Vin Santo + 130 ml Tawny Port)
Method
1. Split the vanilla pod lengthways and scrape out the seeds. Add seeds and pod to a large pan with the sugar, cinnamon sticks, and fortified wine.
2. Warm gently until the sugar dissolves.
3. Add the damsons and bring to a simmer. Cook until the fruit softens and the liquid thickens into a glossy syrup (about 20–30 minutes).
4. Taste — if it’s too sweet, balance with a squeeze of fresh lemon juice.
5. Remove the cinnamon sticks and vanilla pod before jarring.
