I am taking advantage of this polar vortex to freeze concentrate my apple wine. The image below shows a semi frozen pail of apple wine / cider which I made from the pressed juice of apples collected in the orchard 2 months ago. The middle pail is actually 2 pails separated with a spacer. The upper pail has holes drilled in it to make a large cullender, which is also a component of my homemade cider press. The upper pail contains the concentrated apple wine (apple jack) with the ice removed. Here is a close up of the removed ice. It also acts as a filter which removes a lot of the yeast and apple sediment.

What a disaster! And I don't mean Bitcoin going to hell in a handbasket. It is worse than that. I discovered that my portfolio of furs, which I have carefully and painstakingly accumulated, and hodled over the years, has been eaten by moths! Dozens of traditionally tanned meat rabbit pelts, and worse than that, some beaver pelts that absolutely kicked my ass during tanning are all ruined. They even got into one of my double layered rabbit pelt gauntlet mitts that I made. It took me a solid week to make those, not including the tanning process! 😭 I'm just glad I'm learning this lesson at a time when my life doesn't depend on them.😔

In 2 weeks we will be firing up the smokehouse. So my project today is to put the pork, moose, and venison in to cure. The pork leg will be deboned first, and I will be using a honey / brown sugar cure. The day before smoking, I will pull out the salmon and goose breast and applying a similar cure.
