Depending on where you live, there are probably vegetables that you can plant in the fall that will come up in the spring. Here this works with garlic, onions, carrots and potatoes.
I like doing this because it saves time in the spring when I am busy and it's like a little veggy insurance policy. If I don't make it through the winter, my family will still have something to eat come summer.
