This week, I smoked a loin of Canadian bacon, 12 lbs of venison jerky (plus the nasty goose), and made 10lbs of this sausage. I left out the lime & brown sugar, and added curry powder & shallots. I also swapped out the serranos for my garden's jalapeños & doubled them 😅 I have no idea how this will be... hopefully still spicy. I'm so tired. The loopy, delusional, everything is funny kind of tired. I'm not praising anyone today so I don't say anything stupid 😅 I'll write 2 notes tomorrow.

More winter preparations today, listening to folk music and the rain... and the neighbor kid getting attacked by their rooster 😅 I'm not oblivious, just very grateful to be far away from it all. Goose jerky is terrible. I'm sure my dogs will love it. Venison turned out great. I still have a bunch to smoke but I ran out of fuel. Fire roasted hatch & pablano. Roast, chop, freeze. Cook stuff later. Oregano needs to go in the dehydrator. It's too loose and tiny to hang. I'm almost done with outside stuff for the season. Fruits, veggies, and herbs are down, garlic is planted, baby trees are trenched. All I have left to deal with is corn & fennel... and mulching strawberries but it's too early for any of that. I'm ready to stay mostly inside for a few months. I've been slacking on my lessons & my laundry. My art projects are waiting, too.
