I had a very large fat cap on my last ribeye, so saved it to fry cracklins. I love them! image
Umm yes! Reverse seared this giant ribeye in the oven yesterday. Very tender!! I brought leftovers to work with me today. 🔥😋 Cooking instructions: Melt butter in skillet before adding steak. Use meat thermometer. Cook at 200F in the oven until an internal temperature of 123F, remove steak, turn oven to 450F. Then put the steak back in once the temperature is reached and cook until golden brown, internal temperature to 129-130F. This one took 1hr and 28 minutes. I did not bring to room temp before cooking. image
Sourdough soft bread loaf is getting easier to master! I am at a place where I enjoy making it, without a big temptation to eat it myself. Huge accomplishment for me over the years of changing my eating lifestyle. Now I need to master getting the slices cut evenly. 🤷‍♀️ What’s the trick? image image

Poached Eggs Recipe 1. Add 1/2 cup water to a small bowl. Crack 3-4 eggs into the water in bowl (no vinegar needed) 2. Bring 4 cups water to boil in a pot 3. Once water is boiling, gently pour eggs and all water from bowl into the pot with boiling water. It will look like a mess of egg drop soup at 1st. Turn heat down a little and keep simmering. 4. Use slotted spoon to check eggs at about 3 minutes. Takes about 4-5 minutes for whites to be cooked, while keeping yolks runny. 5. Remove eggs with slotted spoon. I like to add butter mayo on top.
If you’re feeling fancy, you can’t go wrong with this idea: Whipped Bone Marrow Butter Roast marrow bones (I roast from frozen, 450°F for 30 minutes) Mix liquid bone marrow with a little steak juice to equal 4 ounces. Mix in 2 ounces of melted salted butter. Let chill enough to whip.
Breakfast panini turned carnivore! It’s so nice to have a coffee shop where I don’t have to explain what I want. I just ask for my usual. They pile on the meat! 🤩🥓🍳 image
