So I wrote a small program that can run offline and scroll through randomly generated seed phrases until I find a memorable one, and generate private public keys, and display qrcodes in terminal window. If anyone wants to use it the are welcome. Script can run directly on python, there is an exe if you want. I suppose the exe could be fine in an offline only situation.
