Two projects come together and do some cold smoking , my 17.5 lb home cured ham , and my Lamb Pancetta . The pancetta won’t take nearly as long as this giant hog leg ,, but I’m very happy with all the colors and smells ,, I failed at my tie on the lamb so I had to use socks . I get the Umbrel DIY blues every time I try to install the update . Updates never work and it breaks my nodes and wallets . Looks like a day of learning ahead . Found a 3.5 lb French cut pork loin on sale , made a peanut butter whiskey cure and after three days , it’s about to hit the smoker for a few hours ,, I will continously baste the brown sugar honey seasame soy glaze through out.
