What would be the equivalent of "google it!" but for ChatGPT?

After seeing how well the lightning network works, what are the reasons that so little merchants accept it still? Is in the pain to convert to fiat, book keeping or regulatory issues or something else? I wouldn't know where to buy a coffee with lightning anywhere.
