Yeah I'm mostly leaning toward just cutting the rusted part out, sealing the metal to prevent rust, and just leaving it like that. I'm never selling it and it's not pretty anymore anyway. I figure it's just the circle of life here.

In that case, yeah gotta stop the rot for sure. You can always fab replacements when you're better. I have a friend that is now confident he could tack in some replacement sheet metal for me. I just need to form it and cut it. He finally has the equipment to do it. I can stick weld, and tack things that don't matter, but I don't have enough practice on mig to do body work XD
