cashu mints are also servers/single point of failures, so cashu doesn't really fix this

You don't have to restore the balance for your customers it is represented in the ecash itself.
Yes, and custody risk is the same. But that is not point here.
the mint must keep a ledger of spent proofs. If that is gone/corrupted, you have the same problem
