how’d it turn out?

A little uneven. Some spots were too chewy. It was a smaller suckling, like 25lbs and we cooked it for 4.5 hours. Will do a longer cook, despite the lower weight next time.

it’s incredibly hard to cook whole animals. it’s looks amazing.
