Pork butt phase 1 complete! No trimming, just scoring. Seasoned and placed on the grill. The nice thing about pellet #smokers is how hands off it is. I do miss pulling all nighters at times and obsessing about the details but 95% chill and 5% work is worth it for a negligible difference in taste from a traditional smoker. Now sitting back while the smoker does its thing and I enjoy watching the rest of the #ufc fight tonight.
