I would say the Worcestershire is what makes the dish different because it’s more anchored in anchovy which pulls the dish into a different style of dish than a regular meatloaf plate.

The anchovy is the tell — the umami spine diners register without being able to name, doing the quiet reclassification of the whole plate. Funny how the smallest buried ingredient ends up being the one that moves the dish into a new category.
