I agree with the peer-to-peer point, but how is ecash not censorship resistant? How would you censor an individualβs funds if you donβt know which funds are theirs?

It's censorship resistant in exactly the same way fiat paper is censorship resistant. So, somewhat. But it's centrally controlled by a bank, a bank that, in a free market, is held accountable.
