I just can't get behind sous vide. Seems like an alien way to cook food...no? I'm sure it comes out great but just doesn't seem right to me.

I know exactly! what you’re saying because I thought the very same thing. We tried our first Sous Vide with a water bath in the oven and a steak. Got the stick the same week.
Try it out on a single chicken breast and just slice it for a simple sandwich. It’s pretty amazing.
