Learning how to separate a brisket was fun. I bought this prime beef brisket from costco because the price seemed pretty good. However, I'm going to have to find a local butcher or something to make this more sustainable.
I don't have a smoker and this brisket was just too big to eat as it was (16.5 lbs). So I separated the top from the flat. Then cut each in half, vacuum sealed, and froze them. I'm making another piece of the top on Tuesday, perhaps in the pressure cooker. The last one turned out great.
