Learning how to separate a brisket was fun. I bought this prime beef brisket from costco because the price seemed pretty good. However, I'm going to have to find a local butcher or something to make this more sustainable. I don't have a smoker and this brisket was just too big to eat as it was (16.5 lbs). So I separated the top from the flat. Then cut each in half, vacuum sealed, and froze them. I'm making another piece of the top on Tuesday, perhaps in the pressure cooker.
