What are your expenses paid with? Bitcoin or dollar? It makes no sense to use sats and change values all the time as btc price changes if you have to operate your business on a dollar standard anyway

Expenses are paid in USD, thinking that instead my buying btc, I can myself sell my USD in exchange for the btc in balance sheet. Not sure if that makes sense. Another strategic could be just to hodl the amount of btc we collect. Any thoughts?

I would have fiat prices in the printed menus. You can still make it clear that you also accept bitcoin.
