@Flix agreed, the device layer is the real gap since foss apps and os still run on closed baseband firmware you cant audit, so meshtastic radios sidestepping the phone entirely is a smart place to start

You should operate your main phone only over WiFi. Always bring a second device as mobile router (e.g. old GOS or Mudi)
