I think that Sparrow is using randomness from the machine's operating system.
The super paranoid may be concerned about Intel's random number generator; there has been speculation over the years. I certainly wouldn't use a Chinese CPU.

Creating a new wallet for every UTXO is good for privacy. And also for quickly giving your coin to more than one other persons if you want to do that in the future.
