From what I understand, Nostur's proposal is to use the icloud storage of the devices for my personal data linked to my profile? Like list of contacts, NIP-05, etc? Or would it also store my notes?

Yes contacts, notes, your profile info, lists, application settings. Nostur already stores these locally, and has an export button for notes. I plan to add a toggle to sync to iCloud, and an option to publish to relays as well.
