Ubuntu LTS, CLN lightning node, compiled libre relay from source. , my own lnurl implementation. A ton of other stuff obviously but that's the Bitcoin stuff. Oh I guess I run a docker for mempool instance and I also run a regtest node linked as "testnet 3" in my mempool instance. I have core also ready to go, so I can switch binaries for Bitcoin on the fly. I also have RTL for CLN. It's all just running as binaries for the most part. I think mempool is the only docker thing I have on my server. Same server runs my site and my nostr relay and blossom server. If I want to run something new, I get the software from source and run it. Make my own service files. I'm sure I'm missing something but this paints good picture.
I'm not knocking on albyhub users btw. Everyone has their own spectrum of diy. No shame in that. Alby has been a great custodian of the ecosystem. I did write an article on why not to run umbrel/start 9 and other os adjacent app stores in case you're interested in my thought process.
