They are all a step up for privacy. For user friendly, start with Ubuntu.

Somebody said to me ubuntu is just for server administration.. I use mint, but its very slow and i dont have a solution to run davinci on itπ

Definitely not only for server administration. As a beginner you'll find a lot of help online (tutorials, how-tos, etc) for probably any issues you could ever stumble on.
There's a trafeoff between the 2 asks. Go towards privacy & use #QubesOS

A userfriendly Linux is for Debian base Ubuntu or Mint. For a Arch base i would say Manjaro. But you can create a userfriendly Linux with every distro you just need a little bit of customization.
