Choosing relays really is the murkiest part of becoming a Nostrich at the moment, in my opinion. I know there are some tolls to help gauge the size and speed but it is still difficult.
I don’t have a solution myself but relays are the fundamental part of Nostr that seem to be largely swept under the rug when it comes to ease of access
