Not an issue really where I live thankfully. I got a 1/4 of a cow for $600 and that's including processing fees at the butchery. I many different cuts and no matter what cut I got it averaged about $2 or so a pound. $2/lbs for beef filet ain't bad at all. NY Strips same thing

3 years ago, local farmers were asking 12$ a lb here for half a cow. I often can buy Ribeye steak for less than that. Not worth it where im at
