I take my panganay to school today and he want lemons square for his baon ...Its like a nostalgia for me bec. lemons square is also my baon when I was in elementary like every single day 😂 it's like I can still taste it just by looking mwehehhe it's not my favorite but the taste of it is something I can't forget ❤️ image

First time eating ilocos empanada last night and since I love it I wanna try doing it later when I have time so I search the recipe online and heres what I found To make authentic Ilocos Empanada, create a brightly orange rice flour dough using hot water and annatto (atsuete) powder. Roll it thin, fill with shredded green papaya, crumbled Ilocos longganisa, and a raw egg, then fold and deep-fry until crispy. Serve hot with a spiced Ilocos vinegar dip. Ingredients For the Dough: 2 cups plain rice flour 2 cups water (or boiling hot water) 1 to 2 tbsp annatto powder (atsuete) or annatto oil 1 tbsp cooking oil 1/2 tsp salt For the Filling (per piece) :1/4 cup grated green/unripe papaya (squeezed dry of excess liquid) 1 to 2 pieces Ilocos or Vigan longganisa (casing removed, sautéed, and crumbled) 1 small or medium raw egg1/4 cup boiled/cooked monggo (mung beans) - optional, traditional in Batac style Salt and black pepper, to taste Cooking oil for deep-frying Step-by-Step Instructions 1. Prepare the Filling:Papaya: Grate the unripe papaya, sprinkle with a pinch of salt, let it sit for 10-15 minutes, and squeeze out all excess water completely to keep the empanada crispy. Longganisa: Sauté the crumbled longganisa until cooked through. Drain any excess oil and set aside to cool. 2. Make the Dough:In a large pot or saucepan, mix the water, annatto powder, salt, and cooking oil. Bring it to a rolling boil.Pour in the rice flour all at once and mix quickly using a spatula to form a shaggy dough. Turn off the heat and keep stirring until the dough comes together.Let it cool for about 10 minutes until safe to handle. Knead the dough until it becomes smooth, elastic, and pliable. Divide it into even portions (usually 4 to 6 balls). 3. Assemble and Fry:Place a dough ball between two pieces of thick plastic (or a sliced Ziploc bag) to prevent sticking. Roll it out into a thin circle (about 1/8-inch thick).On one half of the dough circle, layer the grated papaya and a circle of cooked longganisa.Carefully crack the raw egg right into the center well of the vegetables and meat.Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal, using the rim of a plate to trim and create a neat crimped border.Heat cooking oil to 350° F (175° C). Deep-fry the empanada for about 3 to 4 minutes per side or until the crust is brightly orange, bubbly, and crunchy.Drain on a wire rack and serve immediately. Dipping Sauce (Sawsawan) Ilocos empanadas are best enjoyed with Sukang Iloko (cane vinegar). Mix vinegar with a few cloves of crushed native garlic, a dash of salt, and freshly ground black pepper. image
