Nagmula ito sa salitang Bisaya na "tola" na nangangahulugang "pagpapakulo". Naging sikat na comfort food ito noong 1800s at lalo pang nakilala nang itampok ito ng ating pambansang bayani na si Dr. Jose Rizal sa kaniyang nobelang Noli Me Tangere. Ang Kasaysayan ng Tinolang Manok Pinagmulan bago dumating ang mga Kastila: Ayon sa mga istoryador, ang tinola ay niluluto na ng ating mga ninuno bago pa man sakupin ng mga Kastila ang Pilipinas. Ang mga katutubo sa Kabisayaan ay matagal nang nagluluto ng "tinua" (orihinal na tawag rito) gamit ang mga lokal na sangkap tulad ng luya at tanglad. Ugnayang Pilipino-Kastila: May tala si Antonio Pigafetta noong 1521 na nagsabing ang mga katutubo sa Cebu ay naghain ng sabaw sa mga tripulante ni Magellan, na pinaniniwalaang bersyon ng tinola.
