Recipe Monday: Ham With Nectarines: 1 fully cooked center cut ham slice, cut 2 inches thick. (about 3 pounds) 1 cup of sugar 2 tablespoons cornstarch 2 teaspoons seasoned salt 2 teaspoons of dry mustard 1/2 teaspoon paprika 1/3 cup orange juice 1/4 cup vinegar 2 slightly beaten egg yolks 2 or 3 nectarines, sliced. (about 1.5 cups) Slash edge of ham. Place on rack in shallow baking pan then bake at 350F for 40 minutes. Meanwhile, in a saucepan mix sugar, cornstarch, seasoned salt, mustard, and paprika. Blend in 1 cup cold water, orange juice, and vinegar. Cook over low heat, stirring constantly, until thickened and smooth. Stir a small amount of mixture into egg yolks then return quickly into hot mixture. Cook and stir 1 minute or until bubbly, add nectarines. Place ham on serving plate and spoon on nectarine sauce. Recipe Monday: Green Bean Supreme: 1/2 cup of sliced onion 2 tablespoons butter 2 tablespoons all purpose flour 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon grated lemon peel 1 tablespoon snipped parsley 5 cups drained, cooked, or canned green beans 1 cup dairy sour cream 1/2 cup shredded sharp American cheese 2 tablespoon butter, melted 1/2 cup dry bread crumbs Cook onion in 2 tablespoons butter until tender but not brown. Add flour, salt, pepper, lemon peel, and parsley. Cook and stir until mixture bubbles. Blend in sour cream. Add beans, then heat through, stirring. Turn into 10x6x11.5 inch baking dish. Top with cheese. Combine melted butter and bread crumbs then sprinkle over beans. Broil until cheese melts and crumbles brown.
