And my first syrup is done. 1st gather/boil, I pulled a couple gallon last night. Left is new, right is what I got most of last year. I'll only get 3-5 gal. of really light syrup. So I was talking a bit with @RevHodl and was talking how I keep up with tapping 600 trees, especially when my teenage sons are in sports now. Very labor intensive. I learned from an old timer that made syrup into his late 80's, you don't always have to boil hard. I boil hard when I am home and watching. I smolder and steam when I am sleeping or at work. Here is 4:45 this morning when I got up. The sap level went down a couple inches in pan, and tank level went down 1/3. All told about 50 gallons water boiled off while I slept. I can shut evaporator down pretty tight and am showing the coals I'm left with in morning.
