Glamorous Friday night. Prepping for pressure canning tomorrow. I feel like that poor sap in the navy trapped below deck peeling a mountain of potatoes in a small room. This will be 14 quarts of shelf stable garlic and Montreal seasoned cubes by tomorrow afternoon. I pulled out a quart from 2023 to sample a few weeks ago and fried them in a pan with beef tallow. Great hash browns. Despite not being a carb fan, potatoes have gotten millions of people through harsh times over the course of the last 1000 years.
