any documentation? how it works. I set a folder but what other parameters need to arrange? I have to add this relay in my relay list, right (amethyst for example)? and this means that every note I create saved somehow also there.. (in this folder? in my phone..?). Non technical pleb here 😁

You don't need to setup almost anything. Just install it and then save the relay address to the local relay in Amethyst. It will just work.

Yes and no. You do host them, but only locally. Unless you setup a way how to expose the relay to the world you are only one using it. You can use it to save your drafts, keep local copy of events, etc.

Local relays is the best category I believe. You can't? Is wallet of Satoshi not walletting?
