People are afraid of eating anything other than chemicals and prepackaged foods, and demand State violence be used to prevent anyone doing otherwise. Watching even self-proclaimed "libertarians" freak out over the thought of someone being allowed to sell/buy/consume raw milk is despair-inducing. Lived on a dairy farm as a kid, so for me raw milk is a very normal thing.

Making some cheese at home I simply need milk in which curdling occurs, with the whey separating well from the casein, milk I can found in supermarkets fails to separate well, good enough to make Ricotta or Telemea but not anything else...
