Happy to! I don’t have exact amounts, but here’s a start. I’m a big fan of using what you have. 1qt diced green tomatoes, diced small onion, chopped garlic, sherry vinegar, evoo, salt, a spicy pepper, allspice, yellow mustard seeds and orange peel. Mix and let sit to macerate and β€˜cook’ the tomatoes a bit. Adjust seasoning.

Green tomato, onion, garlic, Serrano pepper, jalapeno pepper, lime zest. Then did 3 different salt ratios for a lacto fermentation. 1.5, 2.0, and 2.5%.
