We used to just cook l batches of the same ratio, so it was all pretty much identical. I don't know the number of bushels, but between us and our neighbors, we'd have 300 quarts. My T1D son really loved it but since his diagnosis he can't eat it (sugar is the medicine for a low blood sugar). So we don't keep it around anymore. He and I eat low carb (most of the time) and it's helped us both (for different reasons).

We cook each variety separately and blend after. I think the Jonathan's cook slower than the others, so we'd get some scorching if we mixed varieties while cooking.
