I love it. I’ve never had beef heart so I can’t really compare it, but I imagine it’s similar. My wife isn’t crazy about it, it’s a texture thing for her, but even she really enjoyed the antelope heart this time. I’ll likely prepare the elk heart similarly when I cook it up later this week.
i can say deer and beef heart are very similar in taste and texture...the deer heart being sweeter and milder, the beef more "grassy" and stronger flavor if that makes sense. But I've never had fresh beef heart, only frozen, where I usually have the deer heart a few hours after the kill.
