Hi, I don't know much about pixel phones, do you think in future Google might try to lock the bootloader so it can't be flashed with a custom ROM easily?

No worries about that.
Check YouTube vidoes for instructions
Get a second hand pixel 6 or Pixel 7 or higher
Come to a local bitcoin meetup and ask if YouTube is not enough
Google could do that yes and probably will now that the Pixel is no longer AOSP's reference device.
If the Pixel 10 allows OEM unlocking I'll be surprised if it's not the last.
Best to get a Pixel now as an update to a stock Pixel could block OEM unlocking.
What would be your number one choice for a pixel model? I might try this
