It’s not done just to modernize the space, drop ceilings can reduce the overall volume of space that needs to be heated/cooled, as well as offering places to hang lighting fixtures.

I would rather have a drop ceiling above me than worry about plaster falling on my head, which is what will eventually happen to the original ceiling. Modern = practical

I was in Greece in an amazing little town called Koroni and there was a huge Venetian battlement that had collapsed due to hydrostatic pressure over the centuries. A huge chunk of the 2 meter thick wall was near a walkway. Looking at the contents of the interior wall I could see they had used Ancient Greek carved stone as “fill” in the battlement wall.
