Would you believe I haven’t picked one out yet 🫣 unfortunately the good stuff is cellared at my in-laws, so I’ll either need to go shopping tomorrow or open something a bit more casual. But given free reign, I’d probably go with a vintage Blanc de Blancs (can’t go wrong) or the Favia couple’s second wine “Carbone” from maybe 2013-14, when it was still a high ratio of Cabernet Franc. I have yet to taste a wine I enjoy more than that one. Although Sforzato comes close… Yourself?
