Tasty Vegan pea Curry soup Recipe 3 tbsp coconut oil 1 medium onion, finely chopped 2 garlic cloves, minced finely 1-ounce ginger, grated 2 tsp fine fragrant curry powder ¼ tsp turmeric powder (optional) 1 tsp roasted and grounded cumin 400g Plum tomatoes 400g coconut milk (preferably homemade) 2 cups cooked peas . 1 cup kale or savoy spinach Salt and pepper to taste Fresh parsley or cilantro for garnish Preparation Heat coconut oil in a pot over medium heat. Saute the onion, garlic and ginger until fragrant. 2. Add curry powder, turmeric and cumin. Stir for 1 minute. 3. Pour in the plum tomatoes and milk. Simmer for 5-6 minutes. 4. Add the pea and cook for another 10 minutes, stirring slowly occasionally. 5. Stir in the kale or spinach until wilted. Season with salt and pepper to your taste. 6. Serve with steamed basmati rice and garnish with fresh cilantro.
