Raw milk is so tasty. Also, raw milk doesn't turn into a rotten disgusting glop with time. It ferments into amazing kefir. It gives "aged like milk" a whole new meaning.

That dude lived like 150 years ago. They didn't know jack about nutrients in milk. Antibiotics weren't common until the 1940's. If you don't have antibiotics, pasteurization makes sense. No refrigeration, either.
