How do e-cash mints can be operated sustainably? Will they inevitably need to offer more "products" if they don't want to run on fractional reserve?

Is this a competitive approach? Most fractional reserve banks do not charge fees, because they need your money to play the game. Mints adopting that strategy will probably outcompete those charging fees.

There is no point in proof of reserves, if you don't have any proof of liabilities (outside of e-cash). It's just a tranquilizer for the uninformed.
people will pay fees to banks that provably have their money
so there is a point.
