I paid with bitcoin for matcha soft serve at Square powered terminal. You can just ask "I heard you can accept bitcoin payments, can you select it?", they select it, on the screen you pick a tip, it shows bitcoin QR code. Scan it with your wallet. Boom!

So this merchants that still have no idea they can accept bitcoin basically get settled with fiat by default?

Yes. But you don't need fiat on your side and also presumably over time the merchants will get report from Square about how many people pay and they can independently and easily decide to accept in BTC.
