What I’m up to?
Mainly running and owning a winery in Piemonte/ Italy, but also heavily contemplating of how to contribute to the BTC and Nostr echo system.
And also currently vibe coding a platform for sommeliers and restaurants that empowers them to handle their wine lists more in depth and quicker while in service. AI supported. All based on Nostr protocol.

Topics: The effects of sprays, tillage, and canopy management on Plant Sap Analysis (pH, redox potential, brix etc)
Tomoko Kuriyama-Bott is an enologist who worked in Germany at Rudolf Fürst and Peter Jakob Kühn, then as the technical director for Altenkirch. In 2010, she founded the micro-négoce Chanterêves with her husband, Guillaume Bott. While their project grew, Tomoko worked as a tâcheron for Chandon de Briailles until 2020. The couple were able to purchase their first plot in 2018 and now regeneratively farm 4.9 hectares. Jon Bonné has described Chanterêves as capturing “all the energy and evolution in Burgundy today.”
Chanterêves looks to further hone their already superb farming by analyzing the effects of their spraying program on their vine sap’s pH, redox potential, brix, conductivity and more, with the help of Senseen’s Nutriscope.
German-born Philine Isabelle Dienger worked with biodynamic luminary Andreas Schumann of Odinstal, as well as Alois Lageder and Dr. Bürklin-Wolf. Later, she spent time with pruning consultants Simonit&Sirch and worked alongside Martin Gojer of Pranzegg. After meeting her partner, Marta Rinaldi, Philine moved to Piedmont in 2019 and produced her first vintage in 2020.
Philine is a remarkable educator on vine nutrition and was one of the first vignerons to tell us about sap analysis. Her ideas about viticulture and vinification are philosophical, scientific, and incredibly inspirational.
