Experimenting in the kitchen today. These aren’t brownies, and they aren’t cookies either. They’re something entirely their own: dates, tempered chocolate, caramelized pecans, cacao nibs, panela, and maple sugar. The flavor is honestly ridiculous, but what surprised me most is the texture. Soft and chewy from the dates, crunchy from the caramelized pecans and cacao nibs, all held together by tempered chocolate. I’ve never had anything quite like it, and I’m fairly convinced nothing else like this exists. Happy to be proven wrong. My goal is to bring these to the local farmers market and, hopefully, be the only vendor accepting Bitcoin. Looks good! I make a snack bar for the kids that we call fat bombs or dirt cakes. They are 1 cup tallow, 3/4 cup cocoa powder. A couple cups of nuts and a couple cups of dried fruit, and some other stuff like coconut flakes and granola. There is no corn syrup or seed oil in them. I add a bit of stevia and brown sugar for sweetness. I press them into cupcake paper cups. They eat one for snack and are full. You can use coconut oil also.
