So, you know the distance to the sun/moon can be measured? Do you know that at different parts of the year, the sun is literally farther away from us? That's seasons. If we were on a flat plane, we would see sun and moon day and night.

Because you literally extend your ability to see. The curve just moves further back because you can see farther. If the earth was flat, that would never happen, they would never go out of view. The earth curves at roughly 8 inches per mile. You cant measure that physically because as you move, you follow the same curve. But, using tools like survey equipment, you can.
