I’m about to start running a bitcoin node. Do I have the choice of which version of core to run (v30.0 or v29.0)? Or as a new node it will automatically download the latest core version?

It is not auto updated. I still run core 25.
you run whatever version you choose to download. if you choose 29, you'll be on 29.
It varies between different node distributions. @Start9 will give you the choice. I don't know about the others, but I think most nodes should give you some way to choose.
