Our butter was always white. I think it was because the cows were not grazing on colored pasture with flowers? I don't know.

yeah it isn't a perfect rule as spring butter has higher beta carotene then other seasons and also the altitude of grass also affects the color.
if the grass is dried (hay or silage), beta-carotene degrades, resulting in paler milk.
Holsteins cows (the most common dairy breed) produce whiter milk regardless of diet unlike Jersey and Guernsey cows
