Do you have weights or anything keeping the veg from coming up out of the liquid? I usually just cap mine with a big piece of onion to hold the smaller solids down, but I’ve also done glass weights in the past.
After a couple months, I’d be scared of mold at the top
Yep. There are glass weights in there and the one way valve I usually pour a bit of vodka in the valve as well. No mold in these. I must have dialed in the salt just right
Nice. I looked back and my ferment on the OP here was actually closer to 2 months.
Tiny amount of mold on the top of 1 jar. I’ll try vodka in the valve next time.
