Simple Apple Muffins (Allergen-Free)
Ingredients (~9 muffins):
- 1 cup tigernut flour
- 1 cup cassava flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp ceylon cinnamon (optional)
- ¼ tsp mineral rich salt
- 1 cup finely chopped apple
- ½ cup maple syrup or honey
- ⅓ cup melted duck fat
- 1 tsp vanilla extract
- ⅔ cup water, milk, or milk alternative
Instructions:
- Preheat oven to 350°F (175°C).
- Line a muffin tin.
- Mix dry ingredients in a bowl.
- Mix wet ingredients + chopped apple in the same bowl.
- Stir until just mixed.
- Spoon into muffin cups (~¾ full).
- Bake 22–26 min until a toothpick comes out clean.
- Cool before serving.
