I'm testing out @Obscura VPN right now. No ID, no email address, paid in bitcoin. Randomly generated account number can be used across multiple devices. So far so good!

They use 2 hops, rather than one. The exit node is mullvad. So it is particularly interesting to me as I use mullvad browser so in "theory" you still blend in with general mullvad VPN users, bit get an extra layer of obfuscation

No you go through 2 trusted gateways not one. Think of it like tor lite. With much much better speeds. Neither end can be a middle man they would have to work together to effectively be a middle man.
