Nice. Breville/Sage ? Yeah, the flow is a bit too fast. Grind just a bit finer and buy a nice digital scale that you put under the cup so you can measure the amount you get. That way you reduce number of variables to optimize (you fix at 18g beans, 36g espresso in a cup) Don't trust the machine timer, that's completely wrong and will make sour/bitter coffee in the end. Optimize from the fix weight and try target 25 - 30s extraction.
